Easy recipe for open face Thanksgiving sandwich

It’s almost Thanksgiving, and even though you  may not be going home for Thanksgiving dinner, there’s no reason you can’t enjoy delicious, homemade holiday food. Here’s an easy recipe to make with friends or bring to a Thanksgiving potluck. It’s an alternative take on a combination of popular Thanksgiving dishes and is less complicated because of some assistance from your local grocery store .

Ingredients:
5-6 slices of whole grain bread
Stuffing Mix
Instant Mashed Potatoes
Butter (amount depends on brands of stuffing mix and instant mashed potatoes)
Canned or jarred cranberry sauce
1/2 cup gravy
Precooked turkey slices
1/3 cup diced carrots
1/3 cup diced celery
1/3 cup diced onions
1/3 cup sliced mushrooms
1 tablespoon minced garlic
1/3 cup chopped parsley
3 tablespoon grated Parmesan cheese
Canned fried onions
approximate prep time:15 minutes
approximate cooking time: 25-30 minutes

Directions:
1) Sauté chopped vegetables and garlic over medium heat until soft and aromatic (about 5-7 minutes). Use the vegetables of your choice for your stuffing.

2) Follow rest of the directions on box for your stuffing and season to taste. For more flavor, replace water with turkey broth.

3) Follow directions to make the mashed potatoes and add minced garlic, parsley and Parmesan cheese at the end for a fresher, more savory taste.

4) Pour gravy in a sauté pan and thoroughly reheat turkey in the gravy.

5) Butter slices of bread and toast them until evenly golden brown.

6) Put the toast onto a plate, layer a few slices of turkey, spoon some stuffing on top and layer with another slice of turkey.

7) Add 2 tablespoons of cranberry sauce on top of the turkey.

8) Sprinkle with some canned fried onions.

9) Dollop some mashed potatoes on the side and add some green vegetable for color.
