Five Easy Microwavable Recipes

For students living in residence halls without a proper kitchen, cooking at home can often be very limited. How much cooking can you actually do without a proper stove or oven? As it turns out, there are a variety of delicious dishes you can cook up right in your own microwave. If you don’t want to go out to a dining hall but still crave that homemade nostalgia, these recipes are the perfect combination of quick, easy and scrumptious for something quick and easy.

Pancakes

Yup, you can make pancakes in your microwave, and they taste delicious!

You will need:

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 tablespoons unsalted butter, melted, or vegetable oil
  • 1 large egg
  • 1 tablespoon vegetable oil

Mix all the ingredients into a bowl until you get a smooth batter. Take a plate and cover it with some butter so that the pancake doesn’t stick. Pour some of the batter onto the plate until there is a thick, circular consistency. Microwave for about a minute or two, until the center is thick, and enjoy!

Quesadillas

It may not be the most authentic Mexican food you’ve eaten, but it’ll do the trick if you’re craving some cheese!

You will need:

  • Tortillas
  • Butter
  • Shredded Parmesan Cheese
  • Salsa and Sour Cream

Spread some butter on each tortilla and then sprinkle cheese on one of the tortillas laying on the plate. Lay the other tortilla on top. Microwave for three to five minutes and top with salsa and sour cream.

Eggs In A Nest

A healthy breakfast that fills you up and will take only a few minutes to make!

You will need:

  • 1 Slice of Bread
  • 1 Egg
  • Salt and Pepper

Using a fork or spoon, cut a decent size hole in the middle of the bread. Crack an egg into that space, making sure the yolk stays inside the hole. Microwave for about a minute and season with salt and pepper.

Mug French Toast

It looks different, but it tastes the same — and as an added bonus, it takes half the time.

You will need:

  • 2 Slices of Bread
  • 1 Egg
  • 3 Tablespoons of Milk

Cut your bread into cubes until you have enough to fill your mug. Put some butter on the bottom of your mug, so that when you fill it with bread it won’t stick. In a separate cup, combine the egg and milk until you get a consistent, runny texture. Pour this into your mug with bread and gently mix. Stick it in the microwave for about one and a half minutes. Top with your favorite syrup.

Nutella Mug Cake

How can you resist anything with Nutella? This is a perfect dessert with just a few ingredients.

You will need:

  • 1/4 cup all purpose flour
  • 1/4 cup Nutella
  • 3 tablespoons milk
  • 1/4 teaspoon baking powder

Combine all the ingredients in a regular mug. Whisk it with a fork until smooth and microwave for one to two minutes. Your cake should come out light and fluffy.
